Chocolate bundt cake with chocolate glaze

This month’s recipe is a Chocolate Bundt Cake I stole from my mum’s recipe notebook! A good chocolate cake recipe is something everyone should have in his baking repertoir – it pleases all ages and it’s the perfect comfort food, no matter the season or the occasion! I’ve used to baking this cake since I was very young and I still make it quite often when I crave something sweet and quick. I gave countless twist to this recipe and even turned into a layer cake for my son’s birthday parties! 🎉 It’s light and spongy, but with a rich and intense flavour that comes from the butter and the cocoa powder. Finish it with some chocolate ganache for a truly indulgent dessert.

Ingredients
  • FOR THE CAKE:
  • 150gr soft unsalted butter
  • 175gr caster sugar
  • 3 medium eggs (separated)
  • 120gr plain flour
  • 16gr baking powder
  • 70gr cocoa powder
  • 150ml whole milk warm
  • pinch of salt
  • FOR THE GLAZE:
  • 100gr dark chocolate callets
  • 100ml double cream
  • 30gr unsalted butter
Directions
  • Step 1 Preheat the oven to 170ºC and grease a 25cm bundt cake tin with some very soft butter
  • Step 2 Using an electric mixer, cream the butter and sugar until light and fluffy
  • Step 3 Add the egg yolks one at a time, making sure the previous yolk is well incorporated before adding the next one
  • Step 4 Put the cocoa powder in a medium bowl and add the warm milk. Stir to form a thick paste with no lumps
  • Step 5 Add the cocoa paste to the butter and egg yolks and mix to combine
  • Step 6 In a separate bowl, sieve the flour and baking powder. Add the pinch of salt and stir to disperse
  • Step 7 Add the dry ingredients to the eggs + chocolate and mix thoroughly
  • Step 8 In another clean bowl beat the egg whites until medium-stiff peaks form, then gently fold them into the batter using a rubber spatula
  • Step 9 Pour the batter into the prepared tin and bake for about 40min or until a toothpick comes out clean
  • Step 10 For the glaze, put the chocolate callets in a small-medium bowl
  • Step 11 In a small saucepan or in the microwave warm up the double cream and bring it to a simmer
  • Step 12 Pour the cream onto the chocolate and stir well until everything is emulsified. Finally stir in the butter to melt
  • Step 13 When the bundt cake gets to room temperature, glaze it with the chocolate and decorate to taste
