Peanut butter has been an unknown taste for most of my life. It’s just doesn’t belong to the food culture where I grew up. During my childhood, the only spread occasionally allowed was Nutella, of course. Peanut butter, though, was a recurrent mention in my mum’s aunts and cousins conversations, who had long before emigrated to the US and who came back every year on summer holidays, bringing all sort of novelties about junk food and goodies. In my mind, it became an idealized flavour…
Only a good bunch of years later, I had the chance to satisfy my curiosity and I’ve been seduced by its silky sugary taste!! Globalisation has changed it all and currently you can find peanut butter also in Italy as easily as Nutella. Maybe this is something positive, but it spoilt the allure of the rarity.
Anyway, in spite of the abundance of modern days, I had never tried peanut butter in any of my bakings. Then I came across this easy and inspiring recipe and decided to try: believe me, these loaves are so moist and tasty that you’ll make them again and again! I went for the plain version, using some dark chocolate chips and roughly chopped peanuts to sprinkle on top. If you are a chocoholic, though, you can add some chocolate chips to the batter as well.

Peanut butter mini loaves
Ingredients
- 100 gr unsalted butter softened
- 180 gr light brown sugar
- 3 medium eggs at room temperature
- 200 gr peanut butter
- 230 gr plain flour
- 16 gr baking powder
- 1 tsp vanilla extract
- 120 ml whole milk
- chocolate chips and peanuts roughly chopped to decorate (optional)
Directions
- Step 1 Preheat the oven at 180ºC (160º fan)
- Step 2 With an electric mixer beat butter and sugar until fluffy and granules are almost completely dissolved to the touch
- Step 3 In a separate bowl lightly beat the eggs with a fork, add the milk and vanilla extract. Set aside
- Step 4 In a different bowl sieve the flour and baking powder
- Step 5 To the butter and sugar mixture add in three additions the eggs and milk, alternating with the peanut butter and the dry ingredients
- Step 6 Divide the batter equally into the loaf cases, using two spoons or a piping bag
- Step 7 Sprinkle chocolate chips and peanuts on top
- Step 8 Bake for about 20 min or until a toothpick comes out clean
